Macaroni and Cheese

 
 
Cook in water on the stove 2 c. dry macaroni, drain off water.
 
Sauce:
In the blender put:
1 c. raw cashews
4 oz jar of pimentos
1/8 c. lemon juice
6 T. Nutritional yeast flakes (found at the health food store)
2 t. salt
1/2 t. onion powder
speck of garlic powder
3 c. water (at first just add 1 cup of water, to let the cashews really blend up good, then add the rest of the water)
 
After you have blended up this real good, you add it to your bowl of cooked, drained macaroni. Then I sauté chopped onion and bell pepper on a Teflon skillet, I sauté in no oil, just keep turning the onions and pepper with the spatula, if I need a little liquid, I just add a few drops of water. Then add the sautéed onion and bell pepper to the bowl of macaroni and cheese sauce, mix together, and bake in a casserole dish at 350 for 45 minutes. This is delicious.
