Cashew Cheese Sauce

Ingredients:

1 medium potato
1 cup water
1/4 cup raw corn meal
1 cup raw cashews
1 cup hot water
1 jar pimento (4 oz)
2 tsp salt
2 Tbs lemon juice
1 tsp Tapatío Hot Sauce
1/4 cup nutritional food yeast

Directions:

Cook potato - Skin and all.

Cook cornmeal with water until consistency of mush.

Blend cashews with water.  While blending add salt, pimento and lemon juice.  Keep blending and add cooked cornmeal.  Test for smoothness with finger test.  When smooth, add cooked potato and use spatula to keep mixture turning in blender.  You may need to add a little water to keep funnel in  the blender whirling.  Blend until moisture is velvety smooth, via the finger test.

The Finger Test
Dip your forefinger in blending sauce.  Rub with thumb to check for
smoothness and texture.
