Whole Wheat Bread

 
This is a simple home-made bread recipe, made by hand, makes only 2 loaves. It comes from "Nature's Harvest" by Darlene Prusia and Joanne Mohr, used by permission.
"No Crumble" Whole Wheat Bread
 
1/3 c. molasses
1 T. lecithin or oil
1 T. oil
1 T. dry yeast
2 c. warm water
5-6 c. whole wheat flou
2 t. salt
1. Dissolve yeast in warm water; add molasses, lecithin, oil and salt.
2. Slowly add flour, mixing well and knead until smooth and elastic.
3. Place in oiled bowl and let rise until double. Punch down and let rise again.
4. Shape into two loaves and let rise until double.
5. Bake at 350 F. for 50 minutes.
 
If you did not want to bake your bread with oil, you could substitute apple sauce for the oil.
 
For those of you who have not made bread by hand, it is necessary to have the temperature of the water between 100-105 degrees for dry yeast.  Water too hot will kill the yeast, but, too cold it will inhibit the growth of the yeast. I let my yeast dissolve in the water a few minutes, and if it foams good, you know that the bread will rise good, because the yeast was not killed. Do not add anything too cold to your yeast, if necessary heat it up in the microwave. If you decide that you want to use applesauce instead of oil, then be sure it is warmed up a little before adding it to the recipe.
